We bring Cairnspring Mills flour from the Pacific Northwest to Hawaiʻi because flour should contribute flavor—not disappear into the background.

Culinary-trained. European-inspired. Hawaiʻi-baked. Guided equally by precision, curiosity, and love.

My relationship with food began long before the bakery. I earned my degree in culinary arts and later spent seven or eight months studying food in Europe while working at a Michelin-starred restaurant. I returned home to Hawaiʻi inspired by the organic, hearth-baked loaves I had experienced there—but bread still intimidated me. The science felt immense.
About eleven years ago, I decided I was ready to understand it. I began chasing the bread I remembered: deeply caramelized, crunchy crusts surrounding soft, almost custardy crumbs. Fermentation, temperature, acidity, grain, and time still keep me endlessly curious. But the deeper I go into the science, the more I understand that it is only part of the story.
Food has always felt spiritual to me. It connects people and carries care from one person to another. Over the last five years, that connection has become central to my life and my baking. It is where The Quantum Baker gets its name—the meeting place between what we can measure and what we can only feel.
